Riojan Potato Soup Recipes
A
rustic peasant soup from the Rioja area of Spain. Use a good
quality chorizo sausage - strong, spicy and full of paprika',
so that the flavour will permeate the soup and give it a pinky
hue.
2 tablespoons olive
oil
1 large onion,
chopped
4 cloves garlic,
chopped
750g ( 1 ½ lb) potatoes, cut into
chunks
940m1 ( 1 ½ pints / 3 ¾ cups) chicken
stock
1 bay
leaf
salt and pepper to
taste
2 chorizo sausages, about 185g (6oz)
total weight, sliced
2 tablespoons chopped
parsley
1. Heat the oil in a pan, add the
onion and fry until softened. Add the garlic and potato chunks
and cook, turning, for 2 minutes until coated in
oil.
2. Add the stock, bay leaf and
seasoning. Bring to the boil, cover and simmer gently for 30
minutes until the potatoes are well cooked and beginning to
break up.
3. Add the chorizo slices and
parsley. Cook for a further 5 minutes to heat through. Remove
the bay leaf before serving. Serves
4.
Variation: Replace the potatoes with
250g (8 oz / 1 ¼ cups)
butter beans. Soak them overnight in cold water to
cover, then drain and add to the soup with an additional 470ml
(¾ pint / 2 cups) stock. Cook the soup for 1 ½ hours, then
add
the chorizo and parsley and cook for 5
minutes.
